Recipe: Breakfast Casserole

Even though I’m a homemaker, my mornings during the week can be hectic. So I try to find meals that will last longer than one day. I was scowling on Pinterest to see what kind of breakfast casseroles were out there (because let’s face it, casseroles lasts a while), I stumbled upon this amazing-looking meal. It was basically love at first sight.

My family really enjoys all of the ingredients that are used in this recipe:

  • eggs
  • Sausage
  • Cheese
  • Biscuits or bread.

So making this was a no-brainer. The original recipe I discovered used canned Pillsbury biscuits and while it was amazing, I wanted to use my homemade bread recipe. Even though the original recipe was a bit more buttery tasting, my family felt like the adjustment I made had them full faster. I have to agree.

You can use your choice of meat in this breakfast casserole

Just because I used sausage (because it’s more filling), doesn’t mean you need to use it. If you rather use lighter meat, you can use bacon from whatever animal you choose. This recipe is super flexible in that regard.

I will admit, the Italian sausage just gives it a really nice flavor that compliments the other ingredients I added to this casserole quite nicely. But, again, if you rather stay away from sausage, you can use a different protein.

  • Chicken
  • Bacon (pork or turkey)
  • Ground sausage
  • Link sausage
  • Beef
  • Bison

You can make this recipe several times over using different proteins until you find the one that really tickles your tastebuds.

Add-ons are more than welcome in this recipe

The original recipe I found on Pinterest only included the base ingredients: eggs, biscuit, sausage, & cheese. At first, I made it exactly how the blogger shared and I knew from the first bite that the recipe was missing something…a lot of things. So the next time I made this breakfast casserole, I changed the dough from store-bought to homemade bread dough, added more eggs, other ingredients, and different spices. All of the changes sent my tastebuds into overdrive. It’ll do the same to yours!
