Recipe: Strawberry Banana. Loaf
Um…I’m sitting here trying to figure out how I want to start this blog post. How about I just say…YUM! That was the first word that popped into my head after trying this new recipe. I wasn’t worried about whether or not I would like it…I mean give me anything banana, I just didn’t expect how much I’d enjoy it.
The sweetness from the banana, the burst of tang from the strawberry, and the fluffiness of the cake-like bread are literally heaven in a loaf. While I was mixing the ingredients, I was dreaming of how amazing this recipe is going to come out. The smell alone sent my tastebuds spiraling out of control.

I was so excited for morning to come because I already knew pairing this heavenly loaf with a hot cup of coffee was the perfect combination. The strawberry banana loaf is soft and squishy while the coffee was hot and creamy. I was correct, this dynamic duo didn’t disappoint. It really set the mood for my mandatory quiet time. I bet this will make the perfect morning snack for you as well.
This loaf recipe makes a great snack for the kids
Let’s face it, the kids love anything I bake, but this recipe was a huge hit with them. The first words out of my son’s mouth were, “this is my favorite bread” which was companied by a huge smile. My daughter still stuffing her face, so she couldn’t comment. However, I took that as her saying she couldn’t get enough! Your kids are going to LOVE this.

Hubby says I’m obsessed with banana anything. And he might be right. I do love nearly every banana-flavored dessert or drink. Though I have to admit, this loaf didn’t have the “in your face” banana taste I look for, but I enjoyed the subtle sweetness it had. So if you, too, love bananas, you’ll still love this recipe but a word of advice…the riper the fruit, the sweet the loaf.
The Strawberry Banana Loaf perfect for freezing
Who says you have to eat it all once you make it (ok…besides me)? This delicious loaf is great fresh but also freezes well for a later treat. So don’t feel like you can’t make this if it’s just you eating it. Slice up the loaf, take what you need and then place the rest in a ziplock freezer bag and freeze the rest. Pro tip: wrap individual slices in Saran Wrap for extra protection.

Now I have to be honest, this isn’t my original recipe. I found it on a different site. You can check out the original recipe if you’d like. But it’s easy to put your own spin on this already amazing recipe. Next time I’ll add some walnuts and vanilla to the mix. If it tastes how I think it’ll taste, I’ll update the post here.
